If we find a high scoring and outstanding microlot with a lot to offer in terms of complexity and intensity, and a cup profile that really is memorable, then we share this coffee as part of our Black Diamond series. This coffee can be washed or natural, organic or not, but the only thing we can say for sure is that it’s a true gem.

HONEY - WINE YEAST & STRAWBERRY

This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage strawberry and wine yeast were added.
The cherries were then pulped and placed to dry on raised beds with ripe strawberry
placed amongst the coffee until the ideal moisture content was achieved.
