Selected Beans – What Makes a Coffee MVSM?
There is no single origin, processing method or flavour profile that defines an MVSM coffee.
Our selection changes constantly, and that is part of what makes it interesting.
We work with producers, importers and partners across the coffee producing world to find coffees that excite us. Some are beautifully clean and precise. Others are wild, fruit driven or experimentally processed. Some coffees are selected because they represent their origin perfectly, while others are chosen precisely because they challenge what we expect coffee from that origin to taste like.
What they have in common is that there is a reason for us to want to roast and drink them.
We taste a lot of coffee. Samples arrive throughout the year, and we spend a considerable amount of time cupping, comparing and discussing them before deciding what belongs in our range. Scores are useful, but they are only part of the picture. We are interested in the story behind the coffee, the producer, the variety, the processing and, most importantly, what happens when we actually taste it.
For us, specialty coffee is about more than finding the highest scoring coffee available. It is about finding coffees with character.
Sometimes that means a small, rare lot from a producer doing something exceptional. Sometimes it is a beautifully balanced coffee that you could happily drink every day. Sometimes it is a coffee that tastes completely unlike anything else on the table.
We want our range to have room for all of these.
This is also where our different coffee editions and releases come into play. Our core coffees are designed to give people coffees they can return to again and again, while more limited and experimental releases allow us to explore the stranger, rarer and more unexpected side of specialty coffee.
Ultimately, selecting coffee is about curiosity.
We want to keep discovering coffees that surprise us, make us rethink what coffee can taste like and, most importantly, make us want to drink another cup.
